Kulkuls Recipe

Kulkuls form an integral part of the sweets distributed to family and friends during Christmas. It’s something I have grown up with. Every year at around this time our family would gather to make these treats. These sweet fried dumplings have a long shelf life. In this post we provide you a simple and easy Kulkuls Recipe.

These old Goan recipes have been handed from one generation to another. Kulkuls were brought to India by the Portuguese.

Kulkuls are an important item in the Kuswar (a collection of Goan Christmas-time treats), and are distributed to neighbor’s. There are recipes which use only all-purpose flour and those that use a combination of all-purpose flour and a bit of semolina (rava).Semolina tends to add a bit of crunch, and I used it in my Kulkuls.

These are crunchy on the outside and a little soft inside.Kulkuls do not need to be glazed with sugar, so you can increase the sugar in the recipe given below and leave out the glaze for a less sweet treat.They are made with coconut milk traditionally.

It’s unbelievable how much time you put into making a handful of these only to see a handful of it disappear into someone’s mouth in a minute! Kulkuls Recipe

Ingredients:

All-purpose flour (Maida) – ½ kg
Fine semolina (Rava) –¼ kg
Powdered Sugar – ¼ kg
Ghee – 2 to 3 tbsp
Salt- 1 pinch
Eggs – 2
Vanilla Essence – 2 drops
Fresh coconut milk – 1 cup
Vegetable oil for deep frying

Method:

1. Mix the maida, rava, powdered sugar, Ghee.
2. Then add the eggs, salt, vanilla essence.
3. Then add the coconut milk to knead and make it soft.
4. The dough should not be sticky.
5. Keep the dough aside for 2 – 3 hours.
6. Then using the comb or fork shape the kulkuls into curls.
